Corning or Pyrex ramekins make these individually baked casseroles special. Kids love the mild Tex-Mex flavor while eating from their very own casserole dish!

This ramekin baked Tex-Mex dish is a very mildly flavored low-fat version of two family favorites: Tex-Mex food and yummy pot pie meals. It is a quick and easy meal to make using common ingredients and the individually served ramekins make eating fun.

Tex-Mex Meal Adjustments for Adult Palates

In order to suite more grown-up tastes, try adding some chopped green chilies, Rot-Tel tomatoes or additional chili powder to the meat mixture. Sliced black olives, freshly cut sweet-corn and Pepper Jack cheese would make tasty additions, too.

A Simple Ramekin Meal in Minutes

  • Prep Time: 5 minutes
  • Cooking Time: 25 minutes
  • Time from Start to Finish: 30 minutes

Quick and Easy Tex-Mex Pot Pie Recipe, Makes 8 Individual Servings

Ingredients:

  • 1 pound turkey or lean ground beef
  • 1½ teaspoons chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups Bisquick brand baking mix
  • ¾ cup water
  • 1 or 2 tomatoes to yield 8 medium tomato slices, cut ¼” thick
  • 1 cup sweet bell pepper, chopped
  • ½ cup low fat sour cream
  • ½ cup low fat mayonnaise
  • ½ cup American or Cheddar cheese, shredded
  • ¼ cup onion, diced

Instructions:

  1. Pre-heat the oven to 375°F.
  2. Spray the inside of 8 Pyrex or Corning Ware ramekins with non-stick cooking spray.
  3. Brown the lean ground meat in a skillet and drain off any excess fat.
  4. Combine the beef with the chili powder, cumin, salt and black pepper; stirring well to combine.
  5. In a small mixing bowl make the topping by combining the sour cream, mayonnaise, cheese and onion. Set aside.
  6. In a separate medium sized mixing bowl, stir together the Bisquick baking mix and water until it forms a ball of dough.

Assemble Casseroles in the Oven Proof Ramekins

  1. Cut the dough into 8 equal sections and press each dough ball into a little casserole dish and up the edge as far as possible to create a little dough shell.
  2. Fill each dough shell with an equal amount of the browned ground beef mixture.
  3. Top each pot pie equally with an even sprinkling of bell peppers and a generous tomato slice.
  4. Take the topping mixture and spread it evenly over each Tex-Mex pot pie.
  5. Bake uncovered for 25 minutes, and serve hot.

Serving Suggestions

Serve these Quick and Easy Tex-Mex Pot Pies with a side salad of sliced mangos, papaya and avocado sprinkled with a little fresh lemon or lime juice, and a tall glass of sweetened iced tea.

Note: If individual casseroles or ramekins are not available, this dish can be also baked in cake tins or other cassarole dishes, and cut into wedges or squares for serving like a pizza. This option, however, will require a few minutes longer baking time.
