The zesty kick of a sloppy joe gone Southwest style. This one pan meal is quick to prepare and is easy on the budget.
Sloppy Joes are an all American meal. They can be found in homes all across the country as well as in diners and at stands at the state fair. Now they are getting a makeover. What could possibly be better than a sloppy joe and a plate of southwest style black beans and rice than to have them married into one glorious pan!
This dinner will only take a few minutes to prepare but it rewards with a big bold taste. Serve it up for a weekend meal along with some fresh fruit and ice cream and you will have a sure winner.
Sloppy Joe Skillet
Ingredients:
1 # ground beef
1 c ketchup
1 14oz can diced tomato (well drained)
2 tbsp Worcestershire sauce
1 4oz can diced chilis or jalapenos not drained
1 1/2 tbsp brown sugar
1/2 tsp salt
1/2 tsp garlic powder
1 tbsp spicy mustard
1 1/2 tbsp apple cider vinegar
1/2 c red wine
1tbsp olive oil
1 red bell pepper
1 yellow onion
1 tsp seasonall
2 c beef broth
1 c white rice
1 14oz black beans (drained)
8 oz frozen corn
1 avocado (optional)
3/4 c shredded cheese (monterey or pepper jack is best)
Preparation:
Dice red bell pepper
Heat olive oil in a large frying pan or large 5 or 6qt sauce pan over med-high heat
Add bell pepper to pan and saute for 4 to 5 min
Place ground beef in a pan with bell pepper and cook until well browned
Sprinkle beef with seasonall
Add salt
Add garlic powder and brown sugar and stir well
Pour in diced tomatoes and green chilis and stir well to incorporate seasoning
In a separate bowl; mix ketchup, spicy mustard, cider vinegar and red wine. Mix well to incorporate
Add ketchup mixture to pan and mix well
Pour in beans and frozen corn and allow to cook for 5 min
Add beef broth
Stir in rice
Bring to a boil then reduce heat to med-low and allow to simmer for about 25 min
Be sure to stir occasionally to keep rice from sticking to bottom of pan
Check rice for firmness after about 20 min. If too firm continue to cook for 5 to 10 more min
Remove from heat when rice is done
Sprinkle with shredded cheese
(Optional) stir in one diced avocado
This one pan meal is delicious by itself but a tossed green salad and cornbread added to the menu rounds the meal out nicely.
If you have any leftovers; just like a great sloppy joe, this casserole can be used as a sandwich filling. All you need to do is warm the filling in a saucepan or in the microwave, put it in a hoagie roll with a slice of cheese and voila! A delicious sandwich.
