Tex-Mex Black Bean Salad is a vegetarian dish that tastes great and is a pretty salad to serve for lunch or as a light dinner.
Tex-Mex Black Bean Salad Recipe
salad greens (spinach looks and tastes especially nice)
2 cans of black beans drained and rinses (15 oz. cans)
1 can sliced black olives (2 1/4 oz can)
1 1/2 cups chopped tomatoes (plum tomatoes work well)
1/4 cup chopped onion (colored onions look pretty)
1/4 cup fresh cilantro (or dry sprinkles if you can't get fresh)
2 TBS. lime juice
1 tsp. cumin, chili powder, or taco season mix
Mexican shredded cheese
Directions:
Wash and let salad greens dry.
Mix together the beans, olives, tomatoes, onion, and cilantro. Toss.
In a small bowl or cup, mix lime juice and seasoning powder.
Pour lime juice mixture over bean mixture. Toss.
Serve black bean taco mix over salad greens.
Add cheese on top if you like.
